Brioche burger buns

Using a bread maker to make your dough and do the first prove, these are spectacularly easy to make! This is my basic bap recipe, enriched with butter, eggs and just a touch more sugar.

  • 450g strong white flour
  • 1tbsp fast yeast
  • 1 1/2tbsp sugar
  • 1tsp salt
  • 1tbsp milk
  • 2 eggs
  • 50g butter

Ingredients: (makes nine burger buns)

Throw everything but the eggs into your bread maker tin. Beat the eggs and remove just a little, around 2tsp worth and keep aside.

Use the dough setting to mix well and allow to prove until doubled in size.

Split into nine equally sized pieces and make each into perfect rounds by squeezing upwards through your hand (made into a fist shape) and tucking the rough edges underneath, so that the top is smooth.

Space out all nine rounds onto a baking sheet dusted with semolina, cover with a tea towel and allow to second prove until well risen and again doubled in size.

Mix your saved beaten egg with 1tsp water, and carefully paint over each bun, being careful not to dribble down the sides.

Bake at 200 degrees fan for 15 minutes, remove and allow to cool.

They freeze well.
