Calabash salad 

While on holiday in the Caribbean, I stumbled across this amazing salad which I’ve made on occasion since I’ve been home. Transports me back to sunshine and the sound of tree frogs! 

Ingredients: 

One tin of black beans 

One small tin of sweetcorn 

Two large or four small beetroot 

One large avocado 

Croutons – easy to make 

Half a cos lettuce 

Dressing of your choice 

Method: 

Tear or shred your lettuce then use as a base. Wash the black beans well and mix with the sweetcorn. You can add a little cheese here if you wish. 

Add the sweetcorn and bean mix on top of the lettuce then chop your beetroot and avocado. 

Top with croutons and you’re away!
