This is a total favourite in our house. It was taught to me by a lady I used to work with who had learnt from her mum. This is proper Indian street food, so I am told.
Ingredients:
5cm nub of fresh ginger
1 large fresh red chilli
3 large juicy garlic cloves
1 red pepper
1 green pepper
1 large fat fresh white onion
2tbsp tomato ketchup
1tbsp soy sauce
1 tbsp tomato puree
1 packet of paneer (Indian cheese)

Method:
Chop your paneer into 1cm cubes and cook carefully (it will spit) in some butter turning regularly until golden on all sides. Put to one side.
Chop onions and peppers and cook in 1tbsp vegetable oil until softened.
Finely chop ginger, chilli & garlic and cook in 1tsp vegetable oil for a minute before adding the vegetables to this pan. Cook for a few more minutes then add in the paneer.
Add the ketchup, soy and tomato puree. Mix well and cook until the sauce begins to caramelise. Taste and add further soy or ketchup to taste as this is a dish based on the balance of sweet and sour flavours. If it looks like it’s getting too dry, add just a dash of water to deglaze the pan.
Enjoy with brown rice or homemade naan bread.
Fantastic the next day for a packed lunch – it’s great on toast and you will be the envy of your workmates when you warm this up and tuck in whilst they’re eating their sandwiches from the petrol station at the end of the road.

Good to know: If you have another pepper or another onion lurking around that need using up, add that in too. If you have some tomatoes that have seen better days, chop them and add to the mix once the onions and peppers are softened.
