Courgette & Feta Fritters

Ingredients:

Three small, two medium or one large courgette

Two large or three medium white onions

Pack of feta cheese

Whole egg

Pepper (ground)

Flour to bind (one heaped dessert spoon) 

Fresh mint

Fresh lime

Method:

  1. Shred courgettes and onions in a bowl, (best done with a mandolin, a grater tends to make the vegetables too thin and watery) drain feta well and crumble in. Add chopped fresh mint and pepper to taste. Do not add salt.
  2. Mix in whole egg and flour to bind. Do not leave to rest, cook immediately
  3. Cook in food rings to shape, one heaped dessert spoon full of mixture in hot pan lightly oiled.
  4. Turn after approximately two minutes or until coloured then place on oiled oven tray and bake at 180 for about another 15 minutes.
  5. Serve immediately with just a drizzle of fresh lime over the fritters. They go really well with homemade herbed potato wedges or just good old fresh minted new potatoes, straight out of the ground of course!
