For a 25×25 baking tin
Ingredients:
250g butter
4 large fresh free range eggs
300g sugar
390g self raising flour
2 heaped tsp baking powder
2 tsp mixed spice
1 tsp cinnamon
2 tsp vanilla (extract not essence)
400g apples
Method:
Grease and line tin
Peel and core the apples so then slice thinly
Cover with clingfilm and pop in the fridge until you are ready to use
Cream butter and sugar
Add eggs with a spoon of flour to prevent curdling
Mix spices with flour and baking powder then mix in with a metal spoon. The mixture will be thick
Layer half the mixture in the bottom of the tin with a pallet knife
Layer over half the apples.
Spoon over the rest of the mixture and later over the remaining apple
Sprinkle sugar over the top and bake at 180 for approximately 50 minutes checking with a skewer in the middle that it’s done.
Allow to cool then turn out and sprinkle with icing sugar
