Fig & goat’s cheese tart

Ingredients:

1 pack of ready rolled puff pastry

4-5 figs

Log of soft goat’s cheese

Honey

Thyme

Rocket

Method:

Not many ingredients here but I am forever hearing people say they don’t know what to do with figs.

Unroll your pastry and pop onto a greased non stick baking sheet. If you want to make it round, use a plate as a template. It looks pretty but I think is a waste of the rest of the pastry! Score a line not quite all the way through about an inch from the edge, all the way around.

Cut figs in half and place onto the pastry cut side up, pack them quite closely together inside your score line. Squeeze little dollops of the goat’s cheese in any available gaps and then chop your fresh thyme and sprinkle over the top. Season with salt & pepper and bake in the oven at 180 for 15-20 minutes until the pastry is golden brown.

Serve on a bed of fresh rocket and drizzle wtih runny honey. Serve with a glass of prosecco of course! This is a cracking starter – you can make little individual ones if you want to be posh 😉
