My grandmother would make these on demand, always just having all of the ingredients needed lurking in her store cupboard. These are a fabulous quick make and are perfect for picnics or afternoon tea.
Ingredients:
250g rolled oats
125g sugar (I prefer soft brown)
125g butter
1tsp vanilla essence
Large handful of plump sultanas, raisins or dried cranberries
Method:
Melt butter gently with the sugar in a saucepan over a medium heat.
Stir in the vanilla, fruit and oats.
Pat down into a lined, greased baking tin (I use 20cm square) and bake for 20 minutes at 190 degrees (180 degree fan)
Take out (you’ll think it’s too runny and not done, have faith!) and allow to cool in the tin for 30 minutes before turning out onto a chopping board and gently cutting into nine squares.
Allow to cool completely before storing in a tin – though they won’t last long I can promise you.
