Green Tomato Chutney
When my husband’s greenfingered grandfather passed away a few years ago, I was tasked with making good use of all the green tomatoes that were in his greenhouse. I couldn’t think of anything more lovely than being able to create something with them and then handing out a jar to every member of the family at Christmas. Here is my recipe x
Ingredients:
2kg green tomatoes
500g apples
500g onions
500g sugar
700ml cider vinegar
6 cloves of garlic
2 inches of fresh ginger, finely chopped
1tbsp salt
1tsp chilli flakes
1tsp ground coriander
1tbsp mustard seeds
Method:
Peel and chop the apples and onions and chop the tomatoes (no need to de-skin these) and heat through in a large pan until the juices flow.
Add all of the other ingredients and stir well, bringing to the boil.
Simmer until you can drag your wooden spoon through the mixture and sufficient liquid has been reduced out so that you can see a feint line in your chutney.
Spoon into warm, sterilised jars and keep for at least two months before opening. This is absolutely amazing with a cheeseboard. Enjoy!
