Couldn’t be easier… I emplore anyone to have a go at this. So quick, so easy and so delicious!
Ingredients:
50g wholemeal plain flour per person/per wrap
25ml cold water per 50g flour
Pinch of salt
Method:
Combine the above. With two of us here, I use 100 g of flour with a pinch of salt and 50ml of cold water. Combine in a bowl and knead very lightly for just a minute or so to bring together into a dough.
Cut the dough in half and roll out on a floured worktop into something resembling a circle. It is important to get it quite even and quite thin. Repeat with the other piece. Use your rolling pin to transport it.
Get your largest non stick pan as hot as you can on the hob and place the first flatbread in. After about two minutes it will start to colour. Turn. Remove from pan and repeat with the other piece.
Enjoy with any one of a number of fillings. These wrap best when they’re warm so ten seconds on each side for those that have cooled just before serving.
Utterly utterly lovely and beats the pants off of anything from a shop. Totally fresh and wholesome with no additives and no preservatives. Yum!
Above: homemade flatbread with harissa, lettuce, red onion, slow cooked Moroccan lamb shank and homemade cucumber, yoghurt and mint dressing.
