This is a super speedy supper. My idea of truly fast food. It’s in the oven in literally minutes!
Ingredients:
Two packs of pre-cooked lentils in tomato/herb sauce
One aubergine
Tin of tomatoes
Two pots of ricotta
Ground nutmeg
Salt & pepper
Whole egg
Cheddar cheese
Method:
- Empty lentils into bowl and mix with tinned tomatoes, place half of this in base of oven dish
- Empty ricotta into bowl and mix in egg, salt, pepper and nutmeg to taste
- Slice the aubergine and grill on either side then layer on top of tomato/lentil base then add more of this base mix
- Spoon ricotta mix over the top, cover in grated cheese and bake for approx 40 mins
Note: If I have time, then I will cook and slice potatoes and layer those in too, but this is my in the oven in under ten minutes version đŸ˜‰
