Paneer & vegetable tikka BBQ skewers

Takes approximately ten minutes plus ten minutes cooking time

Ingredients:

One courgette

One white onion

One red pepper

Block of ready made paneer cheese

3 heaped tbsp plain yoghurt

2 tsp tikka spice mix

Squeeze of lemon juice

Method:

  1. Chop the courgette into rings just less than 1cm thick
  2. Chop onion and pepper into pieces approximately the size of a 10p piece.
  3. Chop paneer into cubes approximately 2cm x 1.5cm
  4. Soak wooden skewers for five minutes in water before assembling (if you are using these rather than metal)
  5. Start with courgette, skewer vegetables and paneer in a regular fashion, end with a courgette too as these hold the rest of the ingredients well whilst being cooked.
  6. Mix the yoghurt, tikka mix and lemon juice well and paint over the vegetable skewers.
  7. These can be cooked in the oven or on a BBQ.
