Over the years I will confess to the old banana cake being a little hit and miss, sometimes grand, sometimes soggy. I’ve experimented with various recipes and have settled upon the one below, an amalgamation of several. This is my infallible, perfect banana cake!
Ingredients:
2 browning over-ripe bananas
125g (half a pack) of butter
150g sugar
1 egg
200g self raising flour
1/2 tsp bicarbonate of soda
1tsp cinnamon
1tsp mixed spice
1tsp vanilla extract
65ml of milk
Method:
Melt your butter in a pan then add the sugar and mix together until it dissolves.
Mash bananas and add to the heated butter and sugar.
Remove from heat. In a clean bowl mix all dry ingredients, the flour, bicarb and spices.
Pour in the melted butter, banana and sugar mix. Add vanilla, milk and beaten egg. Spoon in flour and mix well.
Pour into a lined loaf tin and bake for 50-60 minutes at 170° (until skewer comes out clean).
I often make two at a time, we eat one and I freeze one!
