Plum jam on a rainy day, makes my soul, makes my soul, drift drift drift away 🎶🎶
In the pouring rain, comes knocking on my door, my next door neighbour with a dozen fresh eggs, a punnet of blackberries and a bag of soft sweet plums.
A crumble or three later (one to eat, two for the freezer) I decided to jam the rest of the plums. They weighed in at 510g so working on my principal of equal sugar to fruit, this meant 510g sugar. Simples!
Or you could go with 1kg plums, 1kg sugar if you like a nice round number.
I like to use jam sugar with stoned fruit that’s a little lower in natural pectin.
So 510g plums, same of jam sugar and a tablespoon of lemon juice. Into a pan, bubble up…. Ten minutes on a rolling boil them skim off any froth and pour into warm sterilised jars.
The above recipe made four 190ml jars.
