Ingredients:
One large or two small courgettes
Two onions, red or white
Block of halloumi
Dried mixed herbs
Method:
- Chop the courgettes, onions and halloumi into cubes that are roughly the same size, perhaps 1.5-2cm square.
- Put all of the above into a frying pan with a little olive oil and a generous sprinkling of dried, mixed herbs.
- Cook all together, turning frequently until everything is nicely coloured.
- Lovely served at a BBQ, very nice with couscous (is also good cold the next day) or just as a mixed vegetable side dish with any summer meal.
