Roasted courgettes with onions, halloumi and herbs

Ingredients:

One large or two small courgettes

Two onions, red or white

Block of halloumi

Dried mixed herbs

Method:

  1. Chop the courgettes, onions and halloumi into cubes that are roughly the same size, perhaps 1.5-2cm square.
  2. Put all of the above into a frying pan with a little olive oil and a generous sprinkling of dried, mixed herbs.
  3. Cook all together, turning frequently until everything is nicely coloured.
  4. Lovely served at a BBQ, very nice with couscous (is also good cold the next day) or just as a mixed vegetable side dish with any summer meal.
