I just love soups on a cold day and there is always something that you can concoct out of what you have lying about at home I find.
Today’s creation I may have to rename ‘The best soup in the history of the world… Ever’ 😉
Ingredients:
Two medium sweet potatoes
Two medium parsnips
One large onion
One vegetable stock cube
Pinch of good quality sea salt
100ml cream/creme fraiche to taste
Method:
Peel sweet potatoes and chop into cubes approx 2cm.
Scrub parsnips (I don’t peel as I think the skin contains so much magical goodness) and chop into similar sized pieces as the sweet potatoes.
Peel onion and chop into large rough pieces.
Pop all of the above onto a roasting tray and drizzle over 1tbsp extra virgin olive oil.
Roast for twenty minutes, turning once or twice.
Remove the warm veg from the oven and spoon into a blender with 300ml vegetable stock and the cream and salt.
Blitz until smooth adding a little more water to thin as needed.
Serve with fresh homemade sourdough or sourdough croutons – the ones in the photo I’ve shaken in a jar with some garlic powder…
