This was born out of an absolutely made up concoction one day when we were off out for the day and I suddenly remembered we had people coming for dinner… 15 minutes perhaps of preparation and the slow cooker does all the work for you!
Ingredients:
Pack of free range (always!) chicken thighs and/or legs
Glass of white wine
Two cloves of garlic
Two white onions
One heaped dessert spoon of jarred green pesto sauce (the fresh doesn’t work)
One vegetable stock cube
Four big sun dried tomatoes
Two heaped desert spoons of cream or crème fraiche
Method:
- Brown the chicken in a frying pan until you have some colour on all sides and put into your slow cooker.
- Chop the onions and garlic and add to pot with the wine, tomatoes and pesto, seasoning with salt & pepper.
- Make a stock with the cube and a quarter mug of hot water and add to pot.
- Leave for 4-6 hours.
- 30 minutes before serving, stir in cream or crème fraiche to sauce.
- Serve with your choice of potatoes (rosemary roasted are good) or with cooked pasta.
