Ingredients:
One pack of 6 sausages, chopped and cooked (in one inch wedges)
(can be meat ones or veggie! – the Linda McCartney ones dissolve but the Cauldron or Quorn ones work perfectly)
One glug of red wine (optional!)
Two white onions
One tin of chopped tomatoes, rinse out tin with a little water and pop that in too.
One vegetable stock cube
Tin of sweetcorn drained
One tin mixed chilli beans in sauce
Two peppers
A square or two of dark chocolate
Method:
- Having chopped and cooked your sausages (don’t need to do this with veggie ones), put them in the slow cooker with the wine, onions, tomatoes, sweetcorn and beans, seasoning with salt & pepper.
- Chop the peppers into thick 1cm slices and add to pot too.
- Sprinkle the stock cube into the pot and mix well. Add a small pinch of dried red chilli flakes if you want the casserole to have a bit more of a ‘kick’.
- Leave for 4-6 hours and serve with mash for real winter comfort food.
