Ingredients:
1.8kg apples, peeled, cored and chopped
4 cloves of garlic
4 medium onions
Juice of a lemon
1tbsp mustard seeds
900ml malt vinegar
500g raisins
1tbsp ground ginger
2tsp salt
900g soft brown sugar
Method:
1. Bring the apples, onions, garlic, lemon juice, mustard seeds and 600ml vinegar to the boil and simmer for around an hour.
2. Add the rest of the vinegar plus the ginger, salt, sugar and raisins.
3. Simmer until dark and thick and you can see a feint line in the chutney when you drag a wooden spoon through.
4. Spoon into sterilised jars
