This is another weekday favourite.
This evening for instance, I won’t get in from work until 9 PM! Throwing this in the slow cooker in the morning means it can cook on auto for 12 hours and all I have to do when I get in is shred a little lettuce, chop some tomatoes and grate some cheese while a couple of corn tacos bake in the oven.
Ingredients:
One big onion
Two peppers, any colours
One tin of mixed beans
One tin of kidney beans
One small tin of sweetcorn
Half a large jar of passata
One packet of taco spice blend if you’re really short on time, otherwise 1/2 tsp of each of the following: cumin, coriander, chilli powder or paprika, as well as the same of garlic with 1tbsp of tomato purée, a pinch of salt and a good grind of pepper.
Method:
No pre-cooking required, just throw everything into the slow cooker all day and leave! Let it do all the work for you. There is nothing nicer after a busy day at work, driving home knowing that you don’t have to cook but that you still have home-cooked food waiting for you when you open the door ❤️
