Yorkshire parkin

Now this reminds me for all the world of that Jamaican ginger cake you used to get as a kid in the green and gold wrapper and have at teatime with custard… 

Every so often I make one of these and it serves as a great pud (with custard) or just sliced as a loaf cake with a cuppa. I would say it lasts well in a tin – but in this house it gets eaten up by my hubby before it gets chance to sit around for more than a day!
