Zucchini Fritti 

One freshly picked courgette? Got the munchies for something delicious? Prosecco chilling? Ok you’re ready! This will take you less than five minutes!

  
Chop your courgette into chip sized slices. I use a V slicer mandolin which I can highly recommend as a must have kitchen gadget. Great for getting continuity of sizing for things to be evenly cooked through. 

  
Make a batter of 100g plain flour, 150ml fat milk and one egg. Dip your ‘chips’ into the batter and fry in vegetable oil until golden brown. I have a little fryer set to 190 degrees.

  
Drain, season with salt and pepper and enjoy with some garlic mayonnaise and a glass of Valpolicella or chilled prosecco. One courgette is more than enough for two to share.
