Takes approximately ten minutes plus twenty minutes cooking time
Ingredients:
One large courgette
One egg, beaten
Two tablespoons of flour
Two tablespoons of breadcrumbs
Two tablespoons grated parmesan
Method:
- Chop the courgettes into long ‘chips’ with a mandolin so that they are evenly sized.
- Make up a production line of flour, egg & breadcrumbs and take each piece in turn and bread them.
- Place onto a baking sheet which has been oiled thoroughly.
- Bake until soft through, approximately 20 minutes at 190 degrees, depending on your oven.
